Conch Fritters – Version 1

 

 

CONCH FRITTERS

 

Ingredients:

Oil, for frying
2 medium onions, finely chopped
1 cup green peppers chopped fine
1/3 cup red pepper chopped fine
1/4 cup celery chopped fine
Scotch bonnet minced (optional/amount per preference)
2 lbs finely chopped conch
3 eggs, beaten
2 cups flour
1 tbs baking powder

1 tsp cayenne pepper
1 tbs ground sage
½ teaspoon salt

½ tsp black pepper
¼ cup grated Parmesan cheese (optional)

Directions:

Fill a large frying pan with 2 inches of oil and heat to med/high – (if using fryer – 375 degrees). In a large bowl, combine onions, green and red pepper, celery, garlic, scotch bonnet, parsley, and conch. Stir in eggs.  Separately mix together flour, cayenne pepper, sage, salt, black pepper, Parmesan cheese and baking powder. Stir until mix holds together well. Form into balls and drop into hot oil.  Fry until they are golden brown and floating.
