INGREDIENTS
2 cups shredded coconut
2 cups finely grated sweet potatoes
1 1/2 cups water
1 cup sugar (or to taste)
1 tsp cinnamon
1 tsp ground nutmeg
1 1/2 cups flour
DIRECTIONS
Combine all ingredients. Adjust seasonings to your desired taste. Traditionally, Ducana is wrapped in banana leaves. If you don’t have banana leaves, use heavy duty foil paper. A 10×12 piece of foil should work perfectly. Place a scoop of Ducana mixture into the center of the foil and begin to wrap the foil 1/3 of the loose piece at a time to form a secure seal. Add the wrapped Ducana to boiling water to cover and boil for 30-45 minutes. Remove one, carefully open to check if the Ducana is fully cooked.

Use the Caribbean Sweet Potatoes and not the American Yams.
