I have been searching for this one and finally found it this weekend among some old family pictures. Every Sunday morning when I was little, we would make this for Sunday dinner. Aside from Garbanzo Bean Soup, it is the one thing that I always remembered.
1 cup butter
2 cups sugar
1 grated lime peel
2 tsp vanilla essence
1 tsp baking powder
1 cup milk
Heat oven to 350° F.
Cream sugar and butter
Add eggs one at a time.
Add grated lime peel and vanilla.
Beat on low to mix ingredients well.
Beat on high for about 5 minutes.
Set mixer to low, add flour and baking powder alternately with milk.
Beat well after each addition.
Spoon batter into greased and floured pan. Try a 10 inch bundt pan.
Bake for 65-75 minutes, until a pick comes out clean.
Cool for 15 minutes; invert onto cake plate.
