2 cups sifted flour

2 tbs butter

1 tsp salt

1 tsp baking powder

1/2 cup milk

1-2 tbs sugar

Oil for frying


Sift together dry ingredients.  Add butter and work in with fingers.  Add liquid gradually until a soft, pliable dough forms that won’t stick to the sides of the bowl.  Knead on floured surface for 5 minutes.  Set in bowl and cover with cloth/towel for at least 30 minutes.  Roll into small balls with a rolling pin and pierce with fork.  Fry in hot oil until both sides are light golden brown.

Best served fresh out of the pot.

    I was on the St. Croix Dolphins swim team in the early 80's. After school we would have a snack at the pool before practice. A St. Croix native sold "Coconut Drops", I think that was the name. I would love to have the recipe. I can still taste the wonderful flavor…
