YouTube Video – King Fish

King Fish is a dry fish that I prefer to stew down in the oven so that it can be a bit moist.

Here’s what I used to make this dish

To season:
6 large King Fish steaks (cleaned with water and vinegar)
1 Tbs salt
1 Tbs Adobo
2 tsp pepper
2 tsp oregano
1/2 tsp ground clove
1 tsp garlic powder

Set aside in the refrigerator for a couple hours if you can.

Heat Canola Oil in a skillet and brown the fish on each side. Transfer fish to a baking dish and add the following…

1 can diced tomatoes
4oz tomato sauce
1-2 tsp Kitchen Bouquet
1 large onion chopped
2 stalks celery chopped
4 sprigs thyme chopped
1 scallion
1/2 ea red and green bell peppers chopped
2 sweet peppers chopped
2 cloves garlic minced
3 bay leaves
1 whole scotch bonnet (DO NOT CUT OR PIERCE)
Enough water to cover fish

Put baking dish in the oven and bake at 350 and stir occasionally. Remove the scotch bonnet to a small bowl once it becomes, squash with fork and add some sauce from the baking dish to the bowl. Allow the pepper to sit in the sauce while the fish continues to cook. Add additional seasonings to the fish along the way, if needed, to suite your taste. The complete baking process should be 50-60 minutes. When serving, your guests can add the pepper sauce to their dish for their desired heat.
