Maubi

 

 

INGREDIENTS:

5 maubi bark

2 TBS Sweet Marjoram

2 TBS Anise

2 TBS Rosemary

2 TBS Ginger Root

1/8 tsp grated Nutmeg

3 Cinnamon Stick

½ tsp freshly grated Orange peel

5 quarts water (1 gallon + 1 qt)

3 pounds sugar

2 pinches granular yeast

Directions:
Make a batch of “bitters” by boiling maubi bark, marjoram, anise, rosemary, ginger root, nutmeg, cinnamon stick and orange peel in one quart of water for 10 minutes. Cool bitters.  Make syrup by filling a pot with 1 gallon of water and sugar and heating just to melt sugar. Combine the syrup and bitters into a container.  When it begins to foam, add yeast.  Strain through a cheese cloth and divide into bottles.  Set aside overnight to age and ferment.
