PICKUP SALTFISH

 

 

INGREDIENTS

1 lb saltfish
1 minced medium onion
½ minced green pepper
½ minced red pepper
¼ c olive oil
¼ c vinegar
Leaves from a sprig of thyme
½ – 1 scotch bonnet
Black pepper to taste

DIRECTIONS

Soak salt fish for several hours to remove most of the salt. Pick saltfish apart with fingers into shreds. To saltfish, add all ingredients. Taste to adjust flavor as needed and refrigerate. Serve cold with crackers.

OPTIONS
Decorate with hard boiled egg slices, tomato slices and/or avocados.
