Potato Stuffing – Version 1

 

 

Ingredients

3 lb potatoes
6tbsp olive oil
3tbsp butter
1 medium onion minced
1/2 stalk celery minced
1/4 medium sweet pepper or 6 puerto rican sweet peppers
1/4 tsp thyme
1/2 c tomato sauce
2 tsp parsley
3-4 tbsp brown sugar
1/4-1 c milk
1/4 c raisins
2 eggs 
dash of black pepper

Directions

Peel potato, boil in slated water.. drain and mash… warm frying pan add oil and butter… sauté onion ,celery and peppers.. until tender…. add thyme tomato sauce , parsley , sugar and pepper. Add mixture to potatoes and mix thoroughly…. add milk and raisins and eggs…… The mixture should be a little more moist than mashed potatoes.. if not add more milk and butter…. Pour in greased flat pan and bake at 325 for 45 minutes to 1 hour… top should be golden brown.. can be used for stuffing chicken… makes 12 servings
