SALTFISH FRITTERS

 

 

INGREDIENTS:
½ lb saltfish
2 c flour
2 tsp baking powder
1 tsp salt
½ tsp thyme
1 tbs minced onions
1 clove minced garlic
¼ tsp pepper
2 c water
Oil

DIRECTIONS:
Soak salt fish for several hours to remove most of the salt. Pick saltfish apart with fingers into shreds. Combine dry ingredients in large bowl. Add fish and garlic to dry ingredients and mix well. Add water gradually to create a batter . You may not need to use the full 2 cups. Drop spoonfuls of the batter into hot oil and cook until golden brown.
