8 oz dried sorrel
3 large slices of fresh ginger
2 cinnamon sticks
1 tbs whole cloves
1 piece dried orange peel
1-2 cups sugar
10 cups water (2 additional cups on hand)

Put all ingredients into a large non-corrosive saucepan. Cover and bring to a boil. Boil for up to 3 minutes while stirring constantly. Cool and cover pot. Allow mixture to sit for 1-2 days. Strain mixture and taste. Add sugar or water to balance taste. If you want rum, add it at this point. Chill before serving.

Options: Add 1/4 dark rum
