STEW TAMARIND

INGREDIENTS
Tamarind
Brown Sugar
Cinnamon
Vanilla Extract (optional)

DIRECTIONS
Shell and devein tamarind. Soak in water for a couple hours. Throw off water. Put tamarind in pot with fresh water to just cover Tamarind. Bring to boil and simmer for 30 minutes. Throw off most of the water to make syrup. Add sugar, cinnamon to taste and stir frequently. Boil for about 15 minutes. Stir in vanilla extract, cool and refrigerate.
