Super Bowl Sunday

Well it’s Super Bowl Sunday 2017.  I woke up to “Mommy, why are you still sleeping?  I want some guacamole.”  So with a hard cut eye and long “schuuuupppppsss”, we headed to the kitchen to make our game day favorites.  While pulling out the avocados, I saw that we had some mangoes, so I also decided to make a Mango Salsa too.  I’m also doing a Buffalo Chicken dip.

All of these recipes are super simple and savory.  Make them yours!

GUACAMOLE

8 small Avocados

2 roma tomatoes, diced

¼ c red onion, diced

1 tbs cilantro, diced

1 tbs lemon juice

1 tbs lime juice

Jalapeno to taste, diced

Salt to taste

Cut avocados and remove pit.  Remove the pulp of 4 avocados, place in a bowl and mash well with a fork. Diced the remaining avocado pulp and add to mashed avocados.  Mix in remaining ingredients, mix well and refrigerate for several hours.  Serve with chips.

 

MANGO SALSA

3 large Mangoes, diced

1 roma tomato, diced

¼ c red onion, diced

2 tbs cilantro, chopped

1 tbs lemon juice

1 tbs lime juice

Jalapeno to taste, diced

Salt to taste

3 tbs guava nectar (optional)

Mix all ingredients together.  Refrigerate for several hours.  Serve with chips.

 

BUFFALO CHICKEN DIP

2 cups of shredded rotisserie chicken

1 package of Cream Cheese (80z)

1/2 cup Frank’s Red Hot Buffalo Wings Sauce

1/2 cup Ranch dressing

1 cup Triple Cheddar shredded cheese

1/2 tsp smoked paprika

1 tsp parsley

Pre-heat oven to 350F.  Combine all ingredients into a casserole dish and bake for 20 minutes.  Serve with chips, crackers and/or veggies.
