TART

This “pie” like dessert is a staple for Holidays! Some popular fillings are Pineapple, Coconut and Guava.

TART PASTRY
4 cups – sifted all purpose flour
1 cup – sugar
4 tsp – baking powder
1/2 tsp – salt
1 1/2 tsp – vanilla essence
1 1/2 tsp – almond essence
1 1/2 tsp – cinnamon
1/4 lb – margarine
1/2 cup – shortening
1 – egg
1/2 c – milk
1/2 c – cold water
2 – pie plates

DIRECTIONS
Cream sugar, salt, margarine and shortening in large mixing bowl. Add essence, cinnamon, egg and milk. Beat until ingredients have been well mixed. Then add water, flour and baking powder. Mix well together. Dough should be soft but solid. Divide into 2 equal balls. Do not knead. let stand for 15 minutes. Preheat oven to 325 degrees. Roll out dough into round shape using rolling pin. Place in Press into pie plate. Place favorite filling in pie plate (see recipe below). Cut strips of dough and decorate top of tart in lattice design. Bake tart for 20 minutes or until browned. Remove from oven. Let stand and cool. Slice and serve.

FILLING INGREDIENTS
4 cups – fruit
1 1/4 cups – water
1 cup – sugar

DIRECTIONS
Prepare fruit by washing, peeling, grating as needed based on the fruit you choose. Combine all ingredients in a saucepan. Cook slowly for 10 minutes. Stir occasionally to avoid sticking. Pour into dish and let cool. Filling is now ready to be poured into filling.
